Industry observers are calling it the most refreshing thing to hit the local market in years.

Windermere's newest hospitality venture opened this week on one of downtown's most coveted corners, drawing foot traffic, golf-cart traffic, and at least one very interested Labrador within the first hour.

Shaded by a fringed sage-green canopy and anchored by a pink gingham tablecloth that one passerby called "very on-trend," the space radiates the kind of effortless charm that established chains spend millions trying to create. The menu is lean by design: fresh lemonade from a single glass dispenser, supported by cookies displayed with real intention on a white cake stand. A cup goes for whatever feels fair. Cash only, and no change is given.

The three-person leadership team, sisters Florence and Clementine and their cousin Carolina Rose, observes a strict collective bedtime and runs the operation on a rotation system that would impress a corporate HR department. Per a posted schedule, the day is divided into 3 "20-minute quarters," a unit of measurement the founders appear to have invented, and one the Department of Labor has not yet weighed in on. Three of them make a full business day, which, by this accounting, runs exactly one hour. The rotation, we are told, keeps the work fair, and handoffs on the "quarter" are taken seriously. The real reason is simpler. Nobody wants to be stuck holding the sign.

When asked about expansion, the team grew thoughtful. A second location has been discussed, possibly at everyone's favorite spot, Tom and Dawn Stroups' house, where breaks can be taken in Tom's shop, and the employee lounge is on the snack porch. This is pending parental approval and the acquisition of a second pitcher.

Hours are flexible. The stand opens when the lemonade is ready and closes, without exception, at dinner.

Large bills are happily accepted. And whatever you do, do not skip the cookies.
